Ginger Garlic Chicken (If Vegetarian use Tofu)

The health benefits of garlic and ginger are well known all over the world. They help everything from your skin health, detox and help with free radicals. These are also immune health boosters and help with countless diseases such as Hypertension, cancer and many more. It is amazing that these same inexpensive items are also used as seasoning, in drinks, baking and for so many other things. Since we are what we eat, let's eat more of these and reap the health benefits.

Chicken /Tofu

  • Cut chicken/tofu into thin strips about 3’ in length by ½ in width

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp sesame oil

  • 1 tbsp. corn oil

  • 2 tbsp. freshly grated ginger

  • 4 cloves garlic freshly minced



Sauce

  • ¼ honey

  • 3 tbsp. light brown sugar

  • 1 tsp sriracha sauce

  • 1 tbsp. rice wine vinegar

  • 3 tbsp. reduced sodium soy sauce

  • 1 tbsp. cornstarch




INSTRUCTIONS

  1. Season chicken/Tofu with salt and pepper

  2. Heat sesame oil and corn oil in a large skillet over med-high heat. Add chicken/Tofu and sauté until cooked through or brown. Drain excess fat/oil but leave chicken/Tofu in the skillet.

  3. Add garlic and ginger. Sauté for 30-60 seconds

  4. Remove skillet from heat

  5. In a small saucepan, stir together honey brown sugar, sriracha, vinegar and soy sauce. While constantly stirring, sprinkle cornstarch over the mixture. Bring a gentle simmer and let simmer until mixture thickens about 8 min.

  6. Pour sauce over cooked chicken/Tofu and stir well.

  7. Serve over jasmine or your favorite rice. Top with green onions & sesame seeds. Don’t forget your side dishes and fresh spring vegetables.
