This is another recipe that is easy and great for someone who doesn't want to be in the kitchen too long. Good for a weekend snack and should definitely be a crowd pleaser. Be creative if you are not a meat eater like myself. My go to meat substitute is Tofu, or some other vegan meat substitute that may be found in some supermarkets.
Ingredients:
4 cloves garlic
2 Tbsp. butter
1 lb. shaved beef
Salt to taste
Pepper to taste
Cilantro Lime Sauce
½ sour cream
1/8 tsp. kosher salt
1 lime ( juice and zest)
1/3 c. cilantro, chopped and packed
Salsa
2 Tbsp. cilantro, chopped
1/3 c. Red onion , diced
1 cup of roma tomatoes diced
¼ tsp apple cider vinegar
1 tsp olive oil
Garlic Beef/chicken
Season Beef or chicken with salt and pepper to taste, making sure meat is evenly coated.
Melt butter in sauce pan over med-high heat. Add garlic and meat, stirring occasionally, until beef/chicken is just cooked through, roughly 5 min. Do not overcook
Salsa - Stir together cilantro, red onion, roma tomatoes, salt, apple cider vinegar & olive oil. Place in refrigerator for at least 1 hr. before serving
Cilantro lime sauce - Place sour cream, salt, juice of 1 lime, zest of lime and cilantro in a small food processor.
Process until smooth about 2 min.
Place sauce in container with lid and refrigerate for at least 30 min before serving
Divide beef or Chicken among taco shells. Top with salsa and cilantro lime
