Blender Style Salsa Recipe

Spring is here, things are opening up, flowers are in bloom, and trees are putting back their leaves. People are out seeing other people, doing things and finding places to go. This is a time for food, friends and fellowship. If you are busy like me and you like to entertain, here is a simple dish that you can whip up and serve to delight you, your friends and family. Keeping things simple gives you more quality time to spend with your friends and family.

Prep time 35 min – Servings 10


INGREDIENTS:

  • 1½ to 2 pounds of tomatoes

  • 1 pound fire roasted/grilled tomatoes

  • 4 cloves garlic, freshly minced

  • 1 jalapenos , majority of seeds removed ( Leave just a few seeds)

  • 1 Tablespoon honey

  • ½ tablespoon cumin

  • ¾ cup of cilantro, chopped and loosely packed

  • 3 tablespoon fresh lime juice, from about 1.5 med sized limes

  • ¼ to 1 tablespoon salt


INSTRUCTIONS:

  1. Place all ingredients, except for salt, in a blender or food processor. Blend until well combined about 1 min

  2. Add salt, about ¼ tsp at a time blending after each addition until desired taste is reached

  3. If you desired a spicy salsa, add a few jalapeno seeds at a time , blending after each addition, until desired taste is reached

  4. Refrigerate for at least 1 hour before serving

  5. Serve with your favorite Chip

Fruits and vegetables are getting cheaper so slice and dice, mix and match then pair and share. Try this and let me know how it turns out. Bon Appetit
