Blueberry & the Brain

Blueberries are delicious and most of the time sweet, tasty and low in calories. You can add them to salads, drinks, snacks, hot and cold cereal and much more. They have so many benefits they are known as superfood. When it comes to antioxidants, blueberries are at the top of the heap. Antioxidants in some fruits and foods have been known to slow free radicals in the body. Free radicals have been linked to cancer among other health issues. It would pay to stock up on blueberries the next time you go to the supermarket or farmers market.

Another reason you should eat blueberries, because they are super powerful for your brain. Eat a handful every morning, your brain and body would thank you. Here is another delicious way to enjoy blueberries.

Blueberry Banana Bread

  • Prep Time: 20 minutes

  • Cook time: 1 hr

  • Servings: 10 slices


  • 1/2 Unsalted butter

  • Juice of 1 med. lemon

  • ½ cup of sugar

  • Zest of 1 med lemon

  • ½ cup of brown sugar

  • 1 ½ of all-purpose flour

  • 2 large eggs

  • ½ tsp of salt

  • 3 large bananas crushed

  • 1 tsp. baking soda

  • 2 tsp vanilla extract

  • 1 cup of blueberries


  1. In a small saucepan over medium heat, melt butter. Stir continuously until butter has turned an amber color and has a nutty aroma, about 10 min. Remove from heat. Let harden to the consistency of soft butter by placing the browned butter in the refrigerator for about an hour and stirring every 15 min.

  2. Using an electric mixer with paddle attachment, beat butter, sugar and brown sugar until lightened, about 2 min.

  3. Beat In eggs, one at a time , scraping down sides as needed

  4. On low speed, mix in crushed bananas vanilla extract , lemon juice and lemon zest , until well combined

  5. In a small bowl. Stir together flour, salt and baking soda. Gradually mix into banana mixture

  6. Fold in blueberries

  7. Preheat oven to 350 degree F. Use butter or cooking spray to grease the inside of a 9 ‘’x 5’’ loaf pan

  8. Bake for 50-60 minutes or until a knife inserted into the center of bread comes out with just crumbs.

Serve a slice with lots of love and your favorite hot or cold beverage. Enjoy!
